How to make Homemade Granola

Summer is almost here and that means I need to have plenty of healthy snacks on hand while the kids are home during summer vacation!  One of my favorite snacks is granola. I like making my own granola because I hate that the boxed stuff is usually made with refined sugars and by making my own I can put whatever ingredients I want in it. 

This granola is so yummy, you’ll want to eat it all day!  You can have it for breakfast with unsweetened nut milk and fresh berries or banana slices.  Take it as a trail mix and add dates, raisins or cacao nibs when you’re on the go.  Add it to your yogurt with fresh fruit and make a beautiful yogurt parfait, or just eat it right out of a bowl, like I do! 

Beware, this smells really good when it’s baking and you may be tempted to eat the whole thing right after you take it out of the oven!

Ingredients

▪ 1 1/2 cups old fashioned oats

▪ ½ cup raw almonds

▪ ½ cup raw cashews

▪ ¼ cup raw sunflower seeds

▪ ¼ cup raw pumpkin seeds

▪ 2 TBL coconut oil (unrefined, virgin)

▪ 2 TBL grade B maple syrup or raw honey (or mixture of both)

▪ pinch of salt

▪ 1 tsp cinnamon

Instructions

Preheat oven to 350 degrees F

  1. In a small pot, melt the coconut oil and honey/maple syrup, set aside.
  2. Roughly chop the almonds and cashews.
  3. In a large mixing bowl, mix the chopped nuts, seeds and oats then add the coconut oil and honey mixture, mix well.
  4. Line a baking sheet with parchment paper then pour the granola into the pan.  Spread out evenly.
  5. Bake for 30 minutes or until it’s lightly toasted and brown.

If you are not eating any grains, then you can skip the oats and add more nuts (such as walnuts and pecans).  If you are not eating nuts, then just uses oats and seeds (hemp seeds and sesame seeds are also great to add)!  Get creative and have fun!  Enjoy!!
